Oh, man are you all in for a treat, literally, today! I practically did a cartwheel when Emily Von Euw of This Rawsome Vegan Life asked me to review her new cookbook, “Rawsome Vegan Baking”. She is basically a raw food goddess. While, I love to bake cakes and cookies, I have really fallen in love with raw recipes this year. They tend to be healthier, without processed ingredients and just taste so fresh. When you get a hold of one of Emily’s recipes, or have tried one, you will see what I mean. Her food is not only breathtakingly beautiful, but her recipes are easy and healthy! You all know I am about easy recipes.

Many of her recipes in this gorgeous book are with minimal ingredients. Truly, anybody can make them with ease. They are all so incredibly simple, whole food ingredients and most of them only take a few minutes to put together. Take this recipe for example…..Rawdical Raisin Cacao Cookies With Oats….

Emily gives you the option of eating these raw, just like glorious cookie dough, or……

….you can “cook” them in your dehydrator. I loved them both ways, but quite honestly, think I preferred them as cookie dough because they were super sweet that way. I happen to have a HUGE sweet tooth! If you want this awesome recipe, then you’ll need to order her book here or enter the giveaway below. 🙂

Don’t cry though, I am going to share one of her wonderful, easy recipes today with all of  you….peanut butter cookies. SO good and addicting. I kept poking my face back in the fridge and grabbing one. Only 4 ingredients (plus salt)!! Bam!

“Who didn’t love peanut butter cookies while growing up? They are a favorite of mine due to my love of peanut butter, and so I figured I’d better create a raw version to satisfy my childhood treat–based cravings. This recipe hits the spot! You can use whatever nut butter you like; cashew butter is delicious, for example. The salt sprinkled on top is optional but adds another texture and enhances the flavor. Eat these the day after you make them—they taste better!” -Emily

Peanut Butter Cookies  Makes 9-12 cookies (released with permission from the author)

  •  1 cup raw almonds (145 g)
  • ⅓ cup raw peanut butter (87 g)
  • 1 cup pitted Medjool dates (175 g)
  • ½ teaspoon vanilla
  • Salt to sprinkle on the tops

Directions:

  1. Add the almonds to a food processor and pulse until a flour forms. Add the remaining ingredients, except for the salt and blend until a dough forms.
  2. Using your hands, shape the dough into balls and place them on some parchment paper. Press each ball down flat and indent with a fork going each direction. Place in the fridge to chill overnight. Eat!

You can also find This Rawsome Vegan Life on Facebook here.

You can enter the giveaway below for a chance to win Emily’s cookbook. Or, if you are dying with anticipation to have it now, understandably, then you can order it here.

To qualify, you must be a verified follower of this blog and a US resident and enter the giveaway below. I will notify the winner by email April 23rd, so make sure you have subscribed. Good luck!

Great review Brandi, it sounds like a really great cookbook. I have always been fascinated with the raw lifestyle, and wondered how you could satisfy a sweet tooth, well it sure looks like you can and then some.

Oh yes, definitely…raw is definitely sweeter! But when I bake, it needs more sugar since the baking downplays the flavor profile.

CAKE! I figure, if I won the cookbook, it would arrive right around the corner from my birthday (which is in June), so it’d be the PERFECT opportunity to test ‘er out!

Ah what am I saying, I’d be cracking that book open way before then. I’d have to see what’s in it first to make my final decision, but I’ve always wanted to try my hand at raw baking.

These peanut butter cookies were the first thing that I tried from Emily’s book, they lasted about half a day, kept sneaking them from the fridge like you 😉 I love how simple they are. I’ve left them as just balls before too, sprinkled with salt, and they’re great for traveling snacks.
Great pics as usual Brandi! ♥

I would love to win your cookbook. I believe my youngest grandchild’s gastrointestinal problems can be relieved / healed by going raw. she has been undergoing 2 years of testing by doctors to find out why the pain, why the gain in belly fat, why the constant feeling of wanting to vomit, why the dizziness, etc, etc. She has been through tests for celiac disease, gall bladder, and countless other tests. I believe she does NOT have allergies per se, but intolerances to gluten and processed food additives, and I believe going raw would truly be the answer we are looking for. Having a cookbook handy, rather than having to search the internet all the time, would be a blessing. Thanks for listening, and thanks for your contribution to help improve the health and longevity of those of us who are willing to try. God Bless.

Thank you so much for your comment Shaaron! I wish you luck in the giveaway! I’m sorry to hear your grandchild has had such a rough time, that poor baby. I definitely agree that for the most part, most medical issues can be healed through proper nutrition and eating mostly raw is best and keeps the nutrients in tact. Avoiding processed foods and premade foods and fast foods is crucial for good health. Too many people live off of those foods and their bodies are not getting proper calories or nutrition….more or less getting empty garbage calories and that dramatically weakens the immune system. I pray you can find the answers for your granddaughter! My recipes do not use overly processed ingredients, but I aim to use healthy whole food ingredients and almost all of my recipes are gluten-free and oil-free as well. I hope you can make them and enjoy them and let me know if you do 🙂
