Vegan Almond Butter Blossoms (I’m making these as well at Christmas. This right here is my favorite cookie now for the holidays. I loved Peanut Butter Blossoms as a kid and these are even better. So darn yummy. I like them even better than the Snickerdoodles.)

Just a quick note for Brandi and a recommendation to anyone on the fence about purchasing the Vegan 8 cookbook. I just received mine from Amazon yesterday and it is fantastic! The photography is stunning and I just love cookbooks that provide pictures with each recipe. I may need to put on my stretchy pants because I have a feeling I will be diving head first into the chocolate espresso fudge cake.

Anyone know how to find the Vegan Gluten-free Chocolate Peppermint Cake recipe – the link says the page has been removed. I made this a while back and want to make it again for the holidays. Is this in the cookbook?
Hi Kelly! I’m so sorry, I removed that recipe to improve it, as I felt the texture could be better. I have not finished perfecting it yet. But if you want to make a chocolate peppermint cake, I’d highly suggest the chocolate cake in my book and just add some peppermint extract to the batter. That cake has the perfect texture and flavor and would work great!
