A delicious, fresh and healthy bar to have for breakfast or snack. Infused with fresh lemon juice and herbs, it is the perfect healthy bar. They are wonderfully dense, making one bar very filling and satisfying.

Ingredients
3cupsquick cooking oatsseparated (300g)
12chamomile lemon tea bagsI used Simple Truth Organic caffeine-free
2tablespoonstapioca starcharrowroot would probably work
1/4teaspoonfine sea salt
1/2cuppure maple syrupor agave
1/4cup+ 2 tablespoons roasted drippy/creamy almond butter*make sure the butter is a very smooth runny consistency, as too thick of almond butter will result in a drier bar
1/4cup+ 2 tablespoons fresh lemon juiceabout 3 small lemons
1/2teaspoonvanilla extract
Note
For the tea bagsyou are using the contents of the bag, you are not brewing the tea. Literally just cut open the bags and dump the lemon herbs into the mix. Measurements of oats are also noted in weight for accurate results. It's important to use quick cooking oats for the right texture. The regular oats are too thick/large and will result in a more fragile bar.
Instructions
Line a 9X5 loaf pan with parchment paper hanging over the sides for easy removal.
Add only 1 1/2 cups of the oats to a medium bowl and set aside. Add the remaining 1 1/2 cups of oats to a food processor and process into a flour. Measure out 1 cup + 2 tablespoons only (125g)and add them to the bowl with the oats. Reserve the rest for another recipe or add to a smoothie.
Add the tea bags, tapioca and salt to the oats and stir to combine. Set aside.
In a small cup, add the syrup, almond butter, lemon juice, vanilla and stir well. Pour over the dry ingredients and stir well until it all comes together and is sticky.
Add the mixture to the lined pan and spread out evenly with a rubber spatula and press out to the corners. Overlap with the parchment paper and press down flat and hard.
Chill in the fridge for at least an hour until firm. Slice into 6 bars. Wrap individually with plastic wrap for packing as snacks.
